Garnish: a whole friggin clementine

This cocktail scratches the itch of a margarita lover who is looking for more from their classic cocktails. The mezcal base has a larger influence on the overall flavor than Blanco Tequila — we used Vago Elote, which is not as smoky as some mezcals, but the complexity works really well with the peach in this drink.
Flavors like peach can be somewhat scary to play with (they can easily dominate) but we love how sparingly it is used here and supports not only the mezcal but also the orange flavor of the curaçao while providing balance to the lime. Lastly, the original recipe called for a cinnamon-gentian syrup. So we used cinnamon syrup + a barspoon of Suze. This drink exemplifies how each element can offer balance but also support to where the end product melds the flavors into one and makes so much sense. Cheers!

Stir briefly then cover with a tea towel and allow mix to separate over 2 hours. Strain out solids with cheese cloth and strainer. Strain again if necessary and bottle. This is one of a number of carbonated cocktails we have produced for events this fall and winter. We batch the ingredients and chill until almost frozen. We then charge the mix twice with CO2 at 45 PSI. The carbonated batch is divided among 187 mL glass bottles, capped, and stored in a fridge or in a cooler on ice until being served.
